Old Tom Gin is the spirited bridge between the forefather of gin, known as Genever, and the popular juniper-forward London dry style. Old Tom tends to fall on the sweeter side of the gin spectrum, making it a good gin for sipping. Our Mockingbird Old Tom Style Gin came out of the still juniper forward and spent some time resting in a mead barrel. After aging, the spirit was infused with a touch of honey. The result is a golden and bright gin with a deep, floral nose that finishes with just a kiss of sweetness.

INGREDIENTS:
- 1.75oz Mockingbird Gin
- 0.75oz Sweet Vermouth
- 0.25oz Luxardo
- Orange Bitters
PREPARATION:
- Combine Mockingbird Gin, Sweet Vermouth, Luxardo, & bitters in a cocktail mixing glass with fresh ice.
- Stir with a barspoon for 30 rotations
- Strain into a chilled coupe or martini glass
- Garnish with an orange peel

INGREDIENTS:
- 1.5oz Songbird Gin: Mockingbird
- 1 oz Rosemary infused Grapefruit Simple Syrup
- 0.5 oz Elderflower Liqueur
- 0.5 oz Lemon Juice
- Top with Fever Tree Sparkling Grapefruit
PREPARATION:
- Combine Songbird Gin, simple syrup, and lemon juice, Elderflower Liqueur in cocktail shaker with ice.
- Shake 20 times and strain the contents into a cocktail glass filled with fresh ice.
- Top with Fever Tree Sparkling Pink Grapefruit Garnish with grapefruit slice

INGREDIENTS:
- 2 oz Songbird Gin: Mockingbird
- 0.5 oz Honey Simple Syrup
- 1 oz Lemon Juice
- Lemon Twist Garnish
PREPARATION:
- Combine Songbird Gin, simple syrup, and lemon juice in cocktail shaker with ice.
- Shake vigorously for 30 seconds and strain the contents into a coupe glass or Champagne flute.
- Garnish with lemon twist

HONEY SIMPLE SYRUP:
- 1/2 Cup Honey
- 1/2 Cup Water
- Add the honey and water into a small saucepan over medium heat
- Stir until the honey is dissolved
- Allow to cool and transfer to an airtight container. Syrup will keep, refrigerated, for up to 1 month.
